Gingered Beets, Carrots and Greens

  • 1 large beet with tops—chopped                           
  • 2 large carrots, sliced
  • 1/2 onion, quartered and sliced
  • 1/2 c. mini bellas mushrooms, sliced thick
  • 2 c. Kale, chopped

Steam-fry together in water in frying pan, starting with beets and carrots, covering to simmer.  (Recommended:  Carrots al dente)


  • 1 large garlic clove, chopped
  • Grate 1/2 t. fresh ginger
  • Generous squirts of tamari
